Simple Mashed Potatoes, Fried Eggs & Cabbage

A quick, filling, and balanced meal.

Ingredients (1–2 servings)

Mashed potatoes

  • 2 medium potatoes
  • 1 tablespoon milk
  • 1 teaspoon butter or margarine
  • Salt to taste

Cabbage

  • 1 cup shredded cabbage
  • 1 small onion (optional), chopped
  • 1 teaspoon cooking oil
  • Pinch of salt

For the eggs

  • 2 eggs
  • 1 teaspoon cooking oil
  • Pinch of salt
  • Black pepper (optional)

Instructions

1. Cook the Potatoes

  1. Peel and cut the potatoes into chunks.
  2. Place them in a pot with enough water to cover them.
  3. Add a small pinch of salt.
  4. Boil for 10–15 minutes until soft.
  5. Drain the water.

2. Mash the Potatoes

  1. Add milk, butter, and salt to the hot potatoes.
  2. Mash until smooth and creamy.
  3. Taste and adjust salt if needed.

3. Cook the Cabbage

  1. Heat 1 teaspoon oil in a pan.
  2. Add chopped onion and cook for 1–2 minutes until soft.
  3. Add the shredded cabbage.
  4. Sprinkle a little salt.
  5. Stir and cook for 3–5 minutes until slightly tender but still fresh.

4. Fry the Eggs

  1. Heat 1 teaspoon oil in another pan.
  2. Crack the eggs into the pan.
  3. Sprinkle with a little salt and black pepper.
  4. Cook for 2–3 minutes until the whites are firm.

Serve

Place the mashed potatoes on a plate, add the fried eggs, and serve with the sautéed cabbage on the side.
