Nutrition Information

Approximate nutrition per serving: Nutrient Amount Energy ~450 kcal Protein ~21 g Carbohydrates ~42 g Fat ~24 g Fibre ~11 g

Values are estimates and will vary depending on the bread, avocado and egg sizes used.

Key Nutrients

Protein: Eggs provide high-quality protein that supports muscle maintenance and helps with satiety.

Healthy fats: Avocado and pumpkin seeds provide predominantly unsaturated fats.

Fibre: Whole-grain bread, avocado and pumpkin seeds contribute fibre, which supports digestive health and can help you feel fuller for longer.

Potassium: Avocado is a particularly useful source of potassium.

Choline: Eggs are a good source of choline, an essential nutrient involved in normal brain and cell function.

Nutritious Cooking Method: Boiling

Instead of frying the eggs, boiling them requires no added cooking oil. This makes it easier to control the overall energy and fat content of the meal while still keeping the eggs satisfying and nutrient-dense.

For the bread, light toasting adds texture without requiring butter or oil.

The Secret Ingredient: Lemon Juice

It might seem like lemon is only there for flavour, but it serves two purposes.

First, the acidity adds freshness to the creamy avocado, allowing you to use less salt without making the dish bland.

Second, lemon provides vitamin C. Including a vitamin-C-rich food alongside plant foods containing iron can also help improve the absorption of non-haem iron.

Nutritionist’s Tip

A healthy breakfast doesn’t need to be complicated.

This meal combines three important components:

Whole-grain carbohydrate + protein + healthy fat

The result is a breakfast that’s more balanced than simply having toast on its own.

If you’re trying to manage your weight, focus on the overall portion and your total daily intake rather than eliminating foods such as avocado because they contain fat.

Want More Protein?

If you need a higher-protein breakfast—for example, if you’re physically active—you can increase the egg portion or add a side of plain Greek-style yoghurt.

Want More Vegetables?

Add sliced tomato, cucumber, spinach or sautéed vegetables to increase the volume and micronutrient content of the meal without dramatically increasing calories.

The Simple Nutrition takeaway

Healthy eating isn’t about finding exotic “superfoods.”
