For the chicken
- 250 g boneless skinless chicken breast or skinless chicken thigh
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder or 1 minced garlic clove
- ½ teaspoon lemon juice
- 1 teaspoon cooking oil
- Small pinch of salt
For the bowl
- 1 medium sweet potato, cut into cubes
- 1 cup chopped cabbage
- 1 cup broccoli or green beans
- 1 medium carrot, sliced
- ½ hoho, sliced
- ½ small onion, sliced
- 1 teaspoon cooking oil
- ½ teaspoon paprika
- ¼ teaspoon black pepper
- Small pinch of salt
- 2 tablespoons chopped dhania
How to Make It
- Preheat the oven to 200°C.
- Place the chicken in a bowl and season with paprika, black pepper, garlic, lemon juice, oil and a small pinch of salt.
- Toss the sweet potato with 1 teaspoon oil, paprika and black pepper.
- Spread the sweet potato on a baking tray and roast for about 20–25 minutes, turning halfway.
- Place the seasoned chicken on the tray or a separate lined tray. Roast until completely cooked through. Chicken breast will usually take about 18–25 minutes, depending on thickness.
- Add the carrot, hoho, onion and broccoli/green beans during the final 10–15 minutes of roasting so they retain some texture.
- Make sure the chicken reaches a safe internal temperature of 74°C at the thickest part.
- Divide the roasted vegetables and sweet potato between two bowls.
- Slice the chicken and place it on top.
- Finish with fresh dhania and a squeeze of lemon.
