Recipe 8: Omena, Tomato & Vegetable Stew

A nutritious, budget-friendly fish stew made with omena, tomatoes, onions and vegetables. Omena (silver cyprinid) is a familiar Kenyan food that provides protein and important micronutrients, making it a practical addition to a balanced meal.

Ingredients — 2 servings

  • ½ cup dried omena
  • 2 medium tomatoes, chopped
  • ½ medium onion, chopped
  • 1 medium carrot, diced
  • 1 cup chopped sukuma wiki
  • ½ medium hoho, chopped
  • 1 small clove garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cooking oil
  • ½ teaspoon curry powder
  • ¼ teaspoon black pepper
  • Small pinch of salt
  • 1 cup water
  • 1 teaspoon fresh lemon juice

How to Make It

  1. Place the dried omena in a bowl and rinse thoroughly with clean water.
  2. Soak briefly if needed, then drain well.
  3. Lightly pan-toast the omena in a dry pan for 2–3 minutes to improve the flavour. Set aside.
  4. Heat the cooking oil in a saucepan over medium heat.
  5. Add the onion and cook until softened.
  6. Add the garlic and ginger and stir for about 30 seconds.
  7. Add the tomatoes and cook until they soften and form a thick sauce.
  8. Add the carrot, hoho, curry powder and black pepper.
  9. Stir for 1–2 minutes.
  10. Add the toasted omena and water.
  11. Cover and simmer for about 8–10 minutes.
  12. Add the sukuma wiki and cook for another 2–3 minutes.
  13. Add a small amount of salt if needed.
  14. Turn off the heat and finish with fresh lemon juice.
  15. Serve hot with your preferred carbohydrate.
